Pumpkin is an extremely rich food. It's cooked in all its forms, but did you know it's a real treasure on the plate? Today, we're sharing our 5 favorite pumpkin recipes.



THE HEALTH BENEFITS OF PUMPKIN

Pumpkin provides a ton of nutrients (alpha-carotene, beta-carotene) that boost the production of vitamin A, an antioxidant vitamin, and helps protect the immune system and cell degradation! Pumpkin is also rich in potassium. The latter helps improve blood pressure and prevents the risk of cardiovascular disease. Rich in iron, pumpkin is highly recommended for patients with kidney disease. Finally, it stimulates the digestive system thanks to its fiber-rich flesh!

1. AN EASY PUMPKIN RECIPE: PUMPKIN GNOCCHI

Ingredients: (serves 4)

  • 300g pumpkin and flour
  • Olive oil
  • Salt, pepper
  • Spices of your choice (cumin, curry, etc.)


Preparation :



  1. Steam the pumpkin for 10 to 15 minutes until it is tender. Let it cool (about 2 hours) before starting to cook.
  2. Mash the pumpkin into a puree.
  3. Add the flour with the spices and mix well.
  4. Shape the gnocchi using two teaspoons into small balls that you will flatten slightly with a fork to give the ridged side (a fun and manual task to leave to the children!). If the gnocchi are not easy to handle, add more flour.
  5. Boil a pot of water.
  6. Dip the gnocchi into boiling water and let them cook until they rise to the surface (about 10 minutes of cooking time).
  7. You can serve them plain or fry them in a pan for a few minutes with a drizzle of olive oil. This will give them a crispy texture and a beautiful golden color!
  8. It's ready, enjoy!




2. A HEALTHY PUMPKIN RECIPE: THE AUTUMN BUDDHA BOWL

Ingredients: (serves 4)

  • 200g of rice (or quinoa)
  • 600g of pumpkin
  • 160g of spinach shoots
  • Fresh figs (4 ideally)
  • 4 tbsp pumpkin seeds
  • 3 tsp olive oil
  • 1 tsp apple cider vinegar


Preparation :



  1. Preheat the oven to 200°C.
  2. Wash the pumpkin and its seeds (dry them well afterwards) as well as the spinach.
  3. Dice the pumpkin and place it on a baking sheet. Drizzle with olive oil, season with salt and pepper, and mix. Place the seeds on another baking sheet and repeat the same process. Bake for 10 to 15 minutes. Bake the diced pumpkin for 20 minutes.
  4. Every 5 minutes, stir the seeds: they should brown on all sides.
  5. Halfway through cooking, turn the dice over.
  6. Cook the rice according to the instructions on the package. Once cooked, rinse it with cold water.
  7. Prepare the vinaigrette: 2 parts oil to 1 part vinegar with salt and pepper.
  8. Cut the figs into cubes.
  9. In a bowl, serve cold rice (or quinoa), 1 portion of pumpkin, figs, seeds and spinach leaves.
  10. Season with the vinaigrette!




3. A REFRESHING PUMPKIN RECIPE: PUMPKIN SMOOTHIE

Ingredients: (3 to 4 people)

  • 500g cooked pumpkin, pureed
  • 1 tbsp agave syrup (or coconut)
  • 2 soy/almond yogurts
  • ½ tsp cinnamon, ginger and nutmeg

Preparation :

  1. Add all ingredients to a blender and blend until you get a smoothie.
  2. Serve chilled, for breakfast or as a snack!


4. A GOURMET PUMPKIN RECIPE: PUMPKIN PANCAKES

Ingredients: for 10 to 15 pancakes

  • 250g of wheat flour (or chickpea flour for gluten-free)
  • 40cl of vegetable milk
  • 50ml of vegetable oil
  • 50g of sugar
  • ½ cup pumpkin puree
  • ½ tsp cinnamon and ginger

Preparation :

  1. Mix the dry and wet ingredients separately.
  2. Gradually add the dry ingredients to the wet ingredients until you get pancake batter.
  3. Heat a pan with a little vegetable oil.
  4. Form the pancakes in the pan over low heat and cook for 1 minute on each side.
  5. Feel free to transform this recipe into a savory version!



5. A LITTLE EXTRA FOR DESSERT: PUMPKIN CRUMBLE

The ingredients:

  • 500g of pumpkin
  • 1 onion and 1 clove of garlic
  • 100g of flour and coconut oil at room temperature
  • 1 tbsp curry
  • 50g hazelnut powder

Preparation :



  1. Dice the pumpkin and onion and crush the garlic clove.
  2. Lightly brown the chopped onion and garlic in a little oil, then add the pumpkin and a drizzle of water and cook for 20 minutes covered, stirring regularly.
  3. Preheat the oven to 180°C.
  4. Prepare the crumble: mix the flour, hazelnut powder and curry with the coconut oil.
  5. Roughly mash the pumpkin.
  6. Place it in a glass dish and sprinkle the crumble on top.
  7. Bake for 35 minutes.
  8. Enjoy!
