ANTI-WASTE RECIPE: CHOCOLATE MOUSSE WITH CHICKPEA WATER

THE ROLE OF CHICKPEA WATER IN THE RECIPE :

Chickpea water, also known as aquafaba, has the ability to behave like beaten egg whites. It can be whipped to a light, frothy consistency, making it a perfect substitute for recipes that call for egg whites.

Ingredients : 

  • 1 tin of chickpeas (keep the soaking water)
  • 200 g high-quality dark chocolate
  • 60 g sugar (adjust according to your preference)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Step 1:
Start by emptying the contents of the tin of chickpeas into a colander. Collect the soaking water and pour it into a large bowl.

Step 2:
Using an electric mixer, whisk the chickpea water at medium speed until it starts to foam. Then add the pinch of salt to help stabilise the foam. Continue beating for a few minutes until the mousse is firm.


Step 3:
Melt the chocolate in a bain-marie or in the microwave. Make sure you stir regularly to avoid burning.

Step 4:
Once the chocolate has melted, remove it from the heat and allow it to cool slightly. Add the sugar and vanilla extract and mix until smooth.


Step 5:
Carefully pour the melted chocolate mixture into the bowl containing the chickpea water mousse. Using a spatula, gently fold the chocolate into the mousse. Take care not to overmix to preserve the lightness of the mousse.


Step 6:
Once the chocolate is evenly incorporated, divide the mousse between individual ramekins or a large serving dish. Place in the fridge for at least 2 hours, or overnight, to allow the mousse to set and firm up.

Once the chickpea water chocolate mousse has cooled and set, you can serve it as is or add an extra touch of indulgence. You can sprinkle the mousse with chocolate shavings, chopped nuts or fresh fruit for a touch of freshness.
