A few oilseeds, hazelnuts and roasted pumpkin seeds for taste and for a vitamin E and vegetable protein supplement.

A lemon juice for radiance and energy. A drizzle of olive oil and a turn of the salt mill.

To your stoves!

Brown the hazelnuts, seeds and salt in a pan, stirring until their aroma emerges.
Be careful not to let them burn then let cool.
Arrange the baby spinach on the plates.
Gently season with lemon juice and olive oil and sprinkle over the seed mixture.
